Roast Potato Salad

Total Time: 27 mins Preparation Time: 12 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 800 g roasted potatoes, heat through till warm
  • 3 slices middle bacon, diced
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon whole grain mustard
  • 1/2 teaspoon sugar
  • 3 cups baby spinach leaves

Recipe

  • 1 fry bacon till crisp.
  • 2 in a screw top jar mix olive oil, vinegar, mustards and sugar.
  • 3 arrange spinach on a platter, top with potatoes.
  • 4 sprinkle with bacon.
  • 5 drizzle with dress.
