Easy Roasted Tomato Pesto Soup

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 4 lbs tomatoes
  • 4 -8 garlic cloves
  • 1/2 medium onion
  • 1 cup vegetable broth
  • 2 tablespoons pesto sauce
  • 1 tablespoon avocado oil
  • 3 -4 fresh basil leaves

Recipe

  • 1 preheat oven to 350.
  • 2 line a cookie sheet with parchment paper.
  • 3 slice tomatoes and onions into wedges.
  • 4 peel garlic cloves.
  • 5 place tomatoes, onion, and garlic on the cookie sheet. drizzle with oil and roast for 30-35 minutes.
  • 6 remove from oven and puree in a food processor or blender in batches. add to a soup pot.
  • 7 pour in vegetable broth.
  • 8 stir in pesto.
  • 9 cook over low heat until heated through. about 20 minutes.
  • 10 top with fresh basil cut into ribbons if desired.
