Orange Espresso Spiced Nuts

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1/4 cup butter
  • 1 cup sugar
  • 1 tablespoon espresso powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 2 egg whites
  • 2 cups pecan halves
  • 2 cups lightly salted & roasted cashews
  • 1 cup walnuts, halved
  • 1 tablespoon orange peel, freshly grated

Recipe

  • 1 heat oven to 175. celsius.
  • 2 line a baking pan with heavy duty foil.
  • 3 melt butter in oven in pan with foil.
  • 4 meanwhile combine sugar, espresso powder, cinnamon and salt in a small bowl.
  • 5 place egg whites in a medium bowl. beat at high speed, scraping bowl often, until soft peaks form.
  • 6 continue beating, gradually adding sugar mixture, until stiff peaks form.
  • 7 gently stir in nuts and orange peel.
  • 8 spread nut mixture into pan over melted butter, bake stirring every 10 minutes to thoroughly coat nuts with egg mixture and butter for 25-30 mins or until nuts are browned.
  • 9 cool completely before storing in an air-tight container.
