Orange Espresso Spiced Nuts

Ingredients
- 1/4 cup butter
- 1 cup sugar
- 1 tablespoon espresso powder
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 2 egg whites
- 2 cups pecan halves
- 2 cups lightly salted & roasted cashews
- 1 cup walnuts, halved
- 1 tablespoon orange peel, freshly grated
Recipe
- 1 heat oven to 175. celsius.
- 2 line a baking pan with heavy duty foil.
- 3 melt butter in oven in pan with foil.
- 4 meanwhile combine sugar, espresso powder, cinnamon and salt in a small bowl.
- 5 place egg whites in a medium bowl. beat at high speed, scraping bowl often, until soft peaks form.
- 6 continue beating, gradually adding sugar mixture, until stiff peaks form.
- 7 gently stir in nuts and orange peel.
- 8 spread nut mixture into pan over melted butter, bake stirring every 10 minutes to thoroughly coat nuts with egg mixture and butter for 25-30 mins or until nuts are browned.
- 9 cool completely before storing in an air-tight container.
