Roasted Asparagus With Lemon

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs asparagus
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 6 thin lemon slices

Recipe

  • 1 preheat oven to 475. snap off ends of asparagus and spread on rimmed baking sheet.
  • 2 pour oil over asparagus and toss to coat.
  • 3 season with salt and pepper.
  • 4 roast 8-10 minutes, turning once, until asparagus is tender and begins to caramelize.
  • 5 transfer to a serving dish, toss with lemon juice and zest and garnish with lemon slices.
