Pepper Lamb Pockets

Ingredients

- 1 lb boneless lamb loin chop, cut into 2-inch strips
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 (7 ounce) jar roasted sweet red peppers, drained and coarsely chopped
- 1/2 cup mayonnaise
- 2 tablespoons milk
- 1 teaspoon garlic, minced
- 6 lettuce leaves
- 3 (6 inch) pita breads, halved and warmed
Recipe
- 1 sprinkle lamb with pepper and salt, in a large skillet, saute lamb in oil until juices run clear.
- 2 add red peppers; cook and stir until heated through. remove from theheat.
- 3 in a large bowl, combine the mayonnaise, milk andgarlic.
- 4 spoon lamb misture into lettuce-lined pita halves.
