Lemon Roasted Potatoes

Total Time: 1 hr 20 mins Preparation Time: 35 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 5 red potatoes, quartered
  • 4 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1 lemon, juice and zest of
  • 1 1/4 teaspoons salt
  • 1 teaspoon crushed dried rosemary
  • 1 teaspoon crushed dried thyme
  • 1/2 teaspoon sugar
  • 1/2 teaspoon pepper

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 toss potatoes in a large bowl with half the olive oil. place on a baking sheet; roast for 45 minutes, turning occasionally until browned and tender.
  • 3 combine parsley, lemon juice and zest, salt, rosemary, thyme, sugar, pepper and remaining olive oil. pour over potatoes and toss to evenly coat. serve immediately.
  • 4 hint: these zesty potatoes taste just as good at room temperature.
