Green Chile And Potato Pie

Ingredients

  • Servings: 6
  • 4 -5 red potatoes, unpeeled (new or small)
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 (4 ounce) can chopped green chilies, drained
  • 1 (7 1/4 ounce) jar roasted red peppers, chopped
  • 5 large eggs
  • 1 cup shredded monterey jack cheese
  • 1 cup shredded medium cheddar
  • 1 pinch crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1 dash ground black pepper

Recipe

  • 1 wash and boil potatoes until nearly done - should be firm. when cool, cut into 1/4 inch slices.
  • 2 preheat oven to 375 deg f.
  • 3 in medium skillet, saute onion and garlic in oil until soft. remove from heat and add the chiles and roasted peppers.
  • 4 in a large bowl, beat the eggs. stir in the onion-peppers mix, cheeses, crushed red pepper, salt and pepper.
  • 5 layer half the sliced potatoes in a greased 10" deep-dish pie plate. spoon over half the egg mixture. repeat.
  • 6 bake 30-35 minutes or until golden brown and center is set.
