Peanut Brittle

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 3 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 teaspoon water
  • 4 1/2 cups dry roasted salted peanuts
  • 4 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking soda

Recipe

  • 1 mix baking soda, teaspoon water and vanilla. set a side.
  • 2 mix sugar, 1/2 cup water and corn syrup in a heavy pot. stirring constantly.
  • 3 cook over medium heat unitl it reaches 240* on candy thermometer.
  • 4 add butter and nuts.
  • 5 cook until mixture reaches 290* on candy thermometer.
  • 6 immediatly turn off heat.
  • 7 quickly stir in baking soda mixture until light and fluffy.
  • 8 pour onto greased half sheet pan, spray with cooking spray.
  • 9 roll with a marble rolling pin until about 1/4 inch thick.
  • 10 cool completely: at least 1 hour.
  • 11 break into small pieces and store in an air tight container.
  • 12 makes about 3 lbs.
