Peanut Brittle

Ingredients
- 3 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 1 teaspoon water
- 4 1/2 cups dry roasted salted peanuts
- 4 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract
- 1 teaspoon baking soda
Recipe
- 1 mix baking soda, teaspoon water and vanilla. set a side.
- 2 mix sugar, 1/2 cup water and corn syrup in a heavy pot. stirring constantly.
- 3 cook over medium heat unitl it reaches 240* on candy thermometer.
- 4 add butter and nuts.
- 5 cook until mixture reaches 290* on candy thermometer.
- 6 immediatly turn off heat.
- 7 quickly stir in baking soda mixture until light and fluffy.
- 8 pour onto greased half sheet pan, spray with cooking spray.
- 9 roll with a marble rolling pin until about 1/4 inch thick.
- 10 cool completely: at least 1 hour.
- 11 break into small pieces and store in an air tight container.
- 12 makes about 3 lbs.
