Peanut Brittle Pops

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 3 cups caster sugar
  • 1 cup water
  • 1/2 cup unsalted dry roasted peanuts
  • 12 paddle-pop sticks

Recipe

  • 1 stir sugar and the water in medium heavy-based saucepan over heat until sugar dissolves. bring to a boil; boil about 10 minutes or until toffee turns golden brown.
  • 2 remove pan from heat; allow bubbles to subside.
  • 3 meanwhile, divide nuts among two greased 12-hole (1-tablespoon/20ml) mini muffin pans. cut paddle-pop sticks in half.
  • 4 pour toffee slowly over nuts; cool pops about 10 minutes. position a paddle-pop stick, cut-side down, in each pop.
  • 5 cool at room temperature.
