Red Bell Pepper Paste

Ingredients

  • 2 large red bell peppers, roasted and cut into chunks
  • 3/4 cup walnuts
  • 4 -5 tablespoons breadcrumbs
  • 2 -3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 lemon, juice of
  • black pepper (to taste)
  • 2/3 cup feta cheese, crumbled (optional)
  • 2 garlic cloves, peeled and crushed (optional)
  • 1 tablespoon tomato puree (optional)

Recipe

  • 1 put all ingredients except olive oil and walnuts in a blender. blend until smooth.
  • 2 slowly add olive oil and walnuts, continue blending.
  • 3 make sure not to over-mix, the walnuts should still be left in small pieces.
