Roasted Asparagus With Shallots

Ingredients

- 2 lbs asparagus, trimmed
- 4 shallots, thinly sliced
- 4 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar
- salt
- ground black pepper
Recipe
- 1 preheat the oven to 400 degrees f.
- 2 place the asparagus and shallots in a large bowl.
- 3 add the olive oil and 2 tablespoons of the vinegar.
- 4 season to taste with salt and pepper.
- 5 toss to coat.
- 6 spread the asparagus mixture in a single layer on a baking sheet.
- 7 bake 20 minutes or until the spears are tender and bright green, shaking the pan halfway through the cooking time.
- 8 remove from the oven and toss with the remaining vinegar until coated.
- 9 serve immediately.
