Roasted Asparagus With Shallots

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 lbs asparagus, trimmed
  • 4 shallots, thinly sliced
  • 4 tablespoons extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • salt
  • ground black pepper

Recipe

  • 1 preheat the oven to 400 degrees f.
  • 2 place the asparagus and shallots in a large bowl.
  • 3 add the olive oil and 2 tablespoons of the vinegar.
  • 4 season to taste with salt and pepper.
  • 5 toss to coat.
  • 6 spread the asparagus mixture in a single layer on a baking sheet.
  • 7 bake 20 minutes or until the spears are tender and bright green, shaking the pan halfway through the cooking time.
  • 8 remove from the oven and toss with the remaining vinegar until coated.
  • 9 serve immediately.
