Lemon Roasted Potatoes

Ingredients

- 5 red potatoes, quartered
- 4 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 1 lemon, juice and zest of
- 1 1/4 teaspoons salt
- 1 teaspoon crushed dried rosemary
- 1 teaspoon crushed dried thyme
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper
Recipe
- 1 preheat oven to 400 degrees f.
- 2 toss potatoes in a large bowl with half the olive oil. place on a baking sheet; roast for 45 minutes, turning occasionally until browned and tender.
- 3 combine parsley, lemon juice and zest, salt, rosemary, thyme, sugar, pepper and remaining olive oil. pour over potatoes and toss to evenly coat. serve immediately.
- 4 hint: these zesty potatoes taste just as good at room temperature.
