Mini Potato Zucchini Kugels

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 5 medium potatoes
  • 2 medium zucchini
  • 4 tablespoons roasted garlic
  • 2 medium onions
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 5 eggs
  • 4 tablespoons flour
  • nonstick cooking spray

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 spray two 12-cup muffin tins with nonstick cooking spray.
  • 3 peel potatoes.
  • 4 grate potatoes and place immediately in ice cold water to keep from darkening.
  • 5 grate zucchini and onion separately from potatoes.
  • 6 mix eggs, salt, pepper, and flour.
  • 7 strain liquid from potatoes and squeeze excess liquid using cheesecloth.
  • 8 add potatoes, zucchini, and onion to egg mixture and mix to combine all ingredients thoroughly.
  • 9 evenly distribute mixture into muffin cups.
  • 10 bake 40-45 minutes until golden brown outside.
