Low Fat Blue Cheese Dressing

Ingredients

  • 3 1/2 ounces blue cheese
  • 12 ounces part-skim ricotta cheese
  • 12 fluid ounces buttermilk
  • 2 fluid ounces cider vinegar
  • 1/2 fluid ounce worcestershire sauce
  • 1/2 teaspoon roasted garlic
  • 2 tablespoons chopped chives
  • 1 1/2 teaspoons cracked black pepper
  • salt, to taste

Recipe

  • 1 combine cheeses, buttermilk, vinegar, worcestershire, and garlic.
  • 2 puree until smooth.
  • 3 stir in chives and pepper.
  • 4 season to taste.
  • 5 refrigerate.
