Peanut And Pea Pasta

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 1/4 cups roasted peanuts
  • 3 teaspoons allspice
  • 2 tablespoons ginger
  • 1/3 cup butter
  • 16 ounces cavatappi pasta (or any other textured fun pasta)
  • 16 ounces frozen sweet peas, thawed
  • 1 1/2 cups breadcrumbs (sweet cornbread or couche couche work well)
  • 2 tablespoons nutmeg
  • 2 tablespoons ground coriander
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons dried thyme
  • 1 teaspoon dill
  • 4 tablespoons butter
  • 3 tablespoons brown sugar

Recipe

  • 1 cook first 3 ingredients over low heat.
  • 2 meanwhile- in a seperate pot cook pasta according to directions adding the thawed peas in the last two or three minutes of cook time. the peas must be thawed or the pasta will stop cooking.
  • 3 mix the breadcrumbs and spices and add to the skillet with the peanuts. bring up the heat just a bit-low medium and add the butter. stir until the peanuts and breadcrumbs have a buttery spicy coating and everything is nicely mixed.
  • 4 drain the pasta and peas and return them to their pot- dump in the peanut breadcrumb mixture. add the brown sugar, stir it all well and serve hot!
