Lemon Pasta W Asparagus & Pine Nuts

Total Time: 31 mins Preparation Time: 20 mins Cook Time: 11 mins

Ingredients

  • Servings: 4
  • 1 lb asparagus
  • 8 ounces penne or 8 ounces curly pasta
  • 2 tablespoons olive oil
  • 4 teaspoons lemon zest
  • 1/4 cup lemon juice
  • salt and pepper
  • 1 cup chopped roasted red pepper
  • 6 tablespoons pine nuts
  • 6 -8 tablespoons parmesan cheese

Recipe

  • 1 steam asparagus till crisp yet tender (3-4 min).
  • 2 cut into 1" lengths.
  • 3 cook pasta toss with oil.
  • 4 add asparagus and lemon juice, lemon zest, salt & pepper to taste, and red peppers.
  • 5 add pine nuts just prior to serving.
