Roasted Asparagus, Onions And Mushrooms

Ingredients
- Servings: 6
- 1 1/2 lbs asparagus, trimmed
- 1 lb mushroom, thickly sliced
- 1 medium red onion, sliced
- 2 tablespoons olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- garlic powder, to taste
- shredded parmesan cheese, to taste
Recipe
- 1 heat oven to 425°f.
- 2 line a 10 x 15 inch rimmed baking sheet with foil.
- 3 place vegetables in pan and sprinkle with olive oil and toss until covered evenly.
- 4 sprinkle with salt, pepper and garlic powder.
- 5 roast 10 minutes, stir, sprinkle with parmesan cheese and roast an additional 10 to 15 minutes until vegetables are slightly charred and tender.
