Ricotta-mushroom Mini-frittatas

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup reduced-fat ricotta cheese
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup chopped mushroom
  • 1/2 cup diced roasted red pepper
  • 1 egg
  • 2 egg whites
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon kosher salt (to taste)
  • 1/8 teaspoon fresh ground black pepper (to taste)

Recipe

  • 1 preheat the oven to 375°; spray 15 mini-muffin or tartlet cups with butter-flavored nonstick spray.
  • 2 mix together all the ingredients.
  • 3 fill the muffin cups.
  • 4 bake for 20 minutes, until puffy and lightly browned.
