Kalamata Olives With Roasted Garlic

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 heads garlic
  • 2 1/2 tablespoons olive oil
  • 2 cups kalamata olives, pitted
  • 1/2 cup marsala wine
  • 1 tablespoon chopped fresh rosemary or 1 1/2 teaspoons dried rosemary
  • 1 teaspoon cracked peppercorn
  • french bread or italian bread

Recipe

  • 1 preheat the oven to 350*f.
  • 2 separate the unpeeled garlic cloves.
  • 3 place in a small heat-proof dish and brush with 1/2 tbls.
  • 4 olive oil.
  • 5 cover and bake for 15 minutes.
  • 6 remove the skins from the baked cloves of garlic.
  • 7 add the olives, remaining olive oil, marsala, rosemary, and peppercorns.
  • 8 cover and bake for about 15 minutes, until the garlic is soft.
  • 9 about 5 minutes before the olives are ready, wrap the bread in aluminum foil and heat it in the oven.
  • 10 serve the olives with the warm bread.
